cooking over a fire is FUN
especially in your own
Backyard
I have a favorite summer camp recipe to share today.
This is a very special dutch oven supper that
Boy-Scout-Master husband
and Boy scout sons
have enjoyed many times while camping!
Tonight we made it at home
in our back patio fire bowl
Please don't tell my new friends about the other main ingredient
I don't want to alarm them.

First you should prepare a charcoal fire and allow the coals heat up thoroughly.
You will need precisely eight coals on the bottom
(under the dutch oven)
and eight coals for the top of the dutch oven
Keep the other coals to the side and add them as needed.
That will give you a heat of about 350 degrees
this dutch oven is about 12 quarts |
eight coals turned to a few more as the coals burned up fast on us tonight. |
the foil package to the side is a sliced french bread loaf. |
cook till the rice is tender to your liking (about 30-40 mins) stir it twice and turn the dutch oven to achieve even cooking over the coals. recipe: half onion minced finely (1/4 cup) stick of butter(1/2 cup) little bit of crushed fresh garlic salt / pepper to taste "Bays" seasoning (as much as you like) celery salt two cups of long grain rice three cups of chicken broth two cans cream of chicken soup two cups of water small package of swiss cheese cubed four chicken breasts cleaned and cubed Now that is it, but... you can add peas and carrots or anything you might like in there too. Boy Scouts eat their carrots raw and they just plain do not eat peas! Sorry you garden loving people (I would add a few peas and carrot slices myself!) Master Scouter Hubby melts a stick of butter in the dutch oven then slightly browns the rice in that first then he adds everything else... except the cheese and veges if they are the frozen kind just sit around the fire and let it cook spinning the lid and turning the pot a few times so you don't get a hot spot in the oven. add the cheese for the last 15 mins to melt that down into everything. test the rice after 30 mins and if it is soft enough then it is ready to eat. This looks really yummy. I have a Dutch oven and a Dutch oven cookbook. When I get the gumption to get it out, this recipe is definitely going in that cookbook!
Thanks so much for linking up to the Sunburnt Cow Party. I featured you over at the Screaming Sardine.
